Food grade sodium tripolyphosphate (STPP, CAS 7758-29-4, E451(i)) is an approved food additive widely used as a water retention agent in the food industry.

A variety of water-retaining agents are permitted for food use. Phosphates and sodium bicarbonate are the most common types. As a phosphate additive, food grade sodium tripolyphosphate serves as an effective water retention agent for food processing.

When used as a food water retention agent, sodium tripolyphosphate improves product stability, locks moisture inside food, and optimizes the shape, flavor and color of finished products. It is widely applied in meat products, aquatic seafood and noodle products. It forms a water-binding network to retain moisture and upgrade the texture and mouthfeel of food. It can also chelate metal ions including Ca²⁺, Mg²⁺, Cu²⁺ and Fe²⁺ to form soluble chelates, lowering water hardness. This feature makes it suitable for water purification and softening. Additionally, it helps extend the shelf life of food.

Sodium tripolyphosphate works as a water retention agent, softener and tenderizer. It reinforces protein and globulin structures, boosting the hydration and water-holding capacity of meat products, improving water permeability to soften food, stabilize product quality and preserve its natural good flavor.

Food grade sodium tripolyphosphate manufactured by Chuandong Chemical features high purity, low impurities and consistent stable quality. When dosed in strict accordance with national and regional food additive regulations, food additive sodium tripolyphosphate is safe for food production.
