Food Grade Sodium Pyrophosphate (TSPP) | Functions & Applications in Food

Editor:CDchemTime:2026-10-12

Food grade sodium pyrophosphate, also known as TSPP, is a permitted food additive widely applied in the food processing industry.

Sodium pyrophosphate can chelate metal ions. A 1% aqueous solution of TSPP has a pH of 10.0–10.2. It shares typical properties of polyphosphates: emulsification, dispersion, fat oxidation inhibition, enhanced protein binding capacity. At high pH levels, it suppresses food oxidation and fermentation.

As a multi-functional food additive, sodium pyrophosphate (TSPP) serves as a quality improver, pH adjuster, metal chelating agent, emulsifier, dispersant and binder. It can soften water and dissolve insoluble calcium and magnesium salts. In meat and aquatic product processing, TSPP improves water retention to keep meat tender, stabilizes natural pigments and retards fat rancidity. It is also used in yeast powder and cheese production.

Main applications of food grade sodium pyrophosphate (TSPP):

Canned pork sausage: Compound phosphate blend (60% sodium pyrophosphate + 40% sodium tripolyphosphate) is added during meat chopping and mixing.

Canned poultry products, such as duck four-treasure cans, mushroom duck wings and mushroom braised duck: These products tend to generate hydrogen sulfide during heating. Hydrogen sulfide reacts with iron ions from the can and forms black iron sulfide, ruining product appearance and quality. Adding TSPP-based compound phosphates chelates metal ions and preserves finished product quality.

Cheese processing: TSPP acts as a melting salt and emulsifier. It removes calcium from calcium caseinate, raises casein viscosity and yields soft, stretchable cheese. Usually blended with orthophosphate and metaphosphate. The maximum dosage is limited to 0.9% calculated as phosphorus.

Soy sauce and bean paste: Applied at 0.005%–0.3% dosage to inhibit browning and optimize color.

Minced surimi products (overseas application): Adopt the compound phosphate formula: 60% sodium pyrophosphate and 40% sodium tripolyphosphate.

Chuandong Chemical supplies high-quality food grade sodium pyrophosphate (TSPP) for global food manufacturers. When used within regulatory dosage limits, TSPP is safe for food processing.
